Pantry Chili

I've been using this Real Simple recipe for several years now and always get good reviews from those who eat it.

It is vegetarian but I often add ground turkey, just depends on my mood.

It is all ingredients you can keep in your pantry so you can throw this together anytime. It freezes very well also.

Real Simple Pantry Chili

3 T. olive oil
1 large onion, chopped
2 garlic cloves, minced
2 T. chili powder
1 1/2 t. ground cumin
1 can diced tomatoes with juice
1 can red kidney beans, rinsed and drained
1 can cannellini or great northern beans, rinsed and drained
1 can vegetarian beans or pork & beans (I use Heinz vegetarian beans)
1 T. red wine vinegar

Heat the oil in a large skillet over medium heat.
Add the onion, garlic, chili powder & cumin and saute until the onions are soft.

Add the tomatoes and 1 cup of water.
Bring to a simmer, partially cover with a lid, and cook for 10 mins.

Add the beans and return to a simmer;
continue cooking uncovered for 20 mins. until the chili is thick.

Remove from heat and stir in vinegar.
Season to taste with salt & pepper.

Serve with cornbread and/or a green salad.
